Matumbo Stew Recipe

Description

Matumbo is a tasty dish made from cow or goat intestines. Just like any meat, you can enjoy wet fry matumbo with vegetables and ugali. In this recipe, it's combined with Managu and ugali.

Ingredients

  • 300g Matumbo
  • 1 Onion
  • 1 Bell pepper
  • Coriander
  • 3 tomatoes
  • 1/2 teaspoon mashed ginger
  • 1 clove garlic
  • 2 tablespoons cooking oil
  • Royco
  • Salt to taste

Preparation Procedure

  1. Wash with a lot of water properly to remove all the dirt
  2. In a cooking pot with water add washed matumbo, mashed ginger and garlic, and salt then boil until tender
  3. Drain excess water and set aside
  4. In a frying pan pour cooking oil and fry onions until they are golden brown
  5. Add boiled and drained matumbo
  6. Add grated bell pepper and mix
  7. Add chopped tomatoes and a pinch of salt bearing in mind matumbo was boiled with salt. Allow the tomatoes to cook until they are well-mashed.
  8. Add royco and mix
  9. Add 1 cup of water and cover to simmer for 5 minutes
  10. Sprinkle chopped coriander
  11. Matumbo is ready to be served with ugali and managu or sukumawiki
