Lentils Recipe
Description
Just like beans, Lentils are one of the plant-based proteins. They are easy to prepare since they take a few minutes to cook as compared to other legumes like beans. Most Kenyans prefer taking lentils with rice or chapati.
Ingredients
- 250g Raw lentils
- 1 Onion
- 2 large tomatoes
- 1 teaspoon Paprika
- 1 clove Garlic
- 2 tablespoons cooking oil
- Salt to taste
- Royco (optional)
- Bell pepper
Preparation Procedure
- Wash and boil the lentils until they are soft. Do not overcook them
- Drain excess water and set aside
- In a frying pan pour cooking oil and chopped onions and let them cook until they are slightly brown then add mashed garlic
- Add chopped tomatoes and bell pepper and allow them to cook until the tomatoes are well mashed
- Add salt, paprika, and royco and stir
- Add drained lentils then mix well
- Add a cup of water and cover for 5 minutes
- Lentils stew is ready to serve with chapati or rice
