Mukimo Recipe


Mukimo is one of the traditional foods in Kenya which is popular among residents of the central region or Mount Kenya. It is prepared by mixing maize, potatoes, and pumpkin leaves.


  • 4 medium Potatoes
  • 2 Pumpkin leaves
  • 1/2 cup Soft maize
  • 2 tablespoon Cooking oil
  • Salt to taste
  • 1 Onions

Preparation Procedure

  1. Peel the potatoes and wash them well
  2. Put the potatoes in a cooking pot and add water
  3. Add maize and salt into the pot and let them boil for 20-25 minutes
  4. Mash the potatoes mixed with maize until the potatoes are well mashed
  5. In a different cooking pot boil the pumpkin leaves until they are soft
  6. Blend the boiled pumpkin leaves or mash them using a pestle and mortar
  7. Pour the blended pumpkin leaves into the mixture of maize and mashed potatoes and mix properly
  8. Fry the onions until they are golden brown
  9. Add the onions to the mixture and mix
  10. Mukimo is ready to serve with beef stew or soup
