Liver Stew Recipe
Description
Liver Stew is a favorite dish in Kenya, especially among kids because of its tenderness. Many Kenyan families accompany homemade liver stew with rice, spaghetti, or ugali. It's rich in vitamin A and iron.
Ingredients
- Tomatoes
- Tomato Paste
- Onions
- Salt
- Cooking Oil
- Garlic
- Coriander
Preparation Procedure
- Wash the liver and drain all the water
- Put the liver in a cooking pot at medium heat. Don’t add water let it cook with the little water that remains after draining until its brown. Set it aside
- In the same cooking pot add cooking oil and onions let the onions cook until they are translucent
- Add mashed garlic and mix
- Add chopped tomatoes, bell pepper, and tomato paste. Allow the tomatoes to cook until they are well mashed (Add more spices as you wish to)
- Add salt and liver and mix well
- Add 1 cup of water and stir
- Cover and allow it to simmer for 5 minutes
- Sprinkle coriander
- The liver is ready to serve while hot with spaghetti or rice
