Chicken Stew Recipe
Description
Learn how to prepare a tasty chicken stew, just like a typical Luhya in Western Kenya does. This homemade chicken stew pairs perfectly with Ugali and Sukuma wiki. Check out our previous procedure that we had published of preparing Sukuma Wiki or Ugali.
Ingredients
- Chicken
- Tomatoes
- Coriander
- Onions
- Cooking Oil
- Ginger
- Garlic
- Bell pepper
- Salt
- Chicken masala (optional)
- Water
Preparation Procedure
- Cut the chicken into pieces
- Put the chicken in a cooking pot and add salt and water
- Allow it to boil for 40 minutes that is until it is soft
- Drain the broth and set it aside
- Prepare the ingredients by chopping the onions, bell pepper, and tomatoes, grating the garlic and ginger separately
- In medium heat pour the cooking oil and fry the onions in a frying pan until they are slightly translucent
- Add grated garlic and ginger
- Add the drained chicken and mix
- Add tomatoes and bell pepper allow it to cook until the tomatoes are mashed (blending tomatoes is optional)
- Add a pinch of salt again bearing in mind you had already boiled the chicken with salt
- Add chicken masala and mix
- Add the broth you had set aside
- Cover it and allow it to cook for 5 minutes
- Add the coriander
- Chicken stew is ready to be taken with ugali, rice, or fried plantain
