Egg curry Recipe
Description
Egg curry is a popular Swahili dish that is prepared from boiled eggs spiced up with different ingredients. You can eat it together with rice or spaghetti. Egg curry is rich in proteins.
Ingredients
- Eggs
- Salt
- Tomatoes
- Onions
- Garlic
- Coriander
- Bell pepper
Preparation Procedure
- Boil eggs in a cooking pot for 15 minutes
- Peel the eggs then cut them into halves and set them aside
- Chop Tomatoes, Onions, bell pepper, and mash the garlic separately
- In medium heat fry the onions and mashed garlic (add more spices of your choice)
- Add tomatoes and bell pepper then stir. Let the tomatoes cook until they are well mashed.
- Add salt and one 1 cup of water then stir
- Add the eggs cut into halves
- Let them cook for 5 minutes
- Sprinkle chopped coriander
- It's Ready to be served with rice or spaghetti
