Githeri Recipe
Description
Githeri is one of the most favorite dish in Kenya that's both budget-friendly and simple to make. The common way of preparing Githeri involves mixing maize and beans, then boiling them until they're nice and soft. For added flavor, enjoy your githeri with avocado and hot chili peppers. Githeri dish is packed with carbohydrates, proteins, and fiber.
Ingredients
- Maize
- Beans
- Coriander
- Salt
- Garlic
- Cooking Oil
- Tomatoes
- Onions
- Green pepper (hoho)
Preparation Procedure
- Soak the beans overnight for them to be soft
- Put the soaked beans and maize in a pot or sufuria
- Boil them until they are soft
- Chop the onions and tomatoes separately
- Chop bell pepper and Coriander separately
- Pour some cooking oil into a frying pan
- Add the chopped onions and stir until they are golden brown
- Add grated garlic and stir
- Add tomatoes and let them cook to form a sauce
- Add chopped green pepper and stir
- Add salt to taste
- Add boiled maize and beans, and mix well them with a wooden spoon
- Let it cook in low heat for 5 minutes
- Sprinkle the coriander
- Githeri is ready to be served with Avocado
