Githeri is one of the most favorite dish in Kenya that's both budget-friendly and simple to make. The common way of preparing Githeri involves mixing maize and beans, then boiling them until they're nice and soft. For added flavor, enjoy your githeri with avocado and hot chili peppers. Githeri dish is packed with carbohydrates, proteins, and fiber.


  • Maize
  • Beans
  • Coriander
  • Salt
  • Garlic
  • Cooking Oil
  • Tomatoes
  • Onions
  • Green pepper (hoho)

Preparation Procedure

  1. Soak the beans overnight for them to be soft
  2. Put the soaked beans and maize in a pot or sufuria
  3. Boil them until they are soft
  4. Chop the onions and tomatoes separately
  5. Chop bell pepper and Coriander separately
  6. Pour some cooking oil into a frying pan
  7. Add the chopped onions and stir until they are golden brown
  8. Add grated garlic and stir
  9. Add tomatoes and let them cook to form a sauce
  10. Add chopped green pepper and stir
  11. Add salt to taste
  12. Add boiled maize and beans, and mix well them with a wooden spoon
  13. Let it cook in low heat for 5 minutes
  14. Sprinkle the coriander
  15. Githeri is ready to be served with Avocado
