Fried Eggs with Tomatoes Recipe

Preparation Procedure
- Crack the eggs into the bowl and beat them properly
- Fry chopped onions in a frying pan with cooking oil
- In medium heat let them cook until they are translucent
- Add chopped tomatoes and green pepper
- Let them cook until they are well mashed
- Add salt to taste
- Reduce the heat and add the beaten eggs as you mix
- Continue mixing until they solidify
- Add the coriander and mix
- Eggs are ready to be served with ugali and vegetables
