Beans Stew Recipe
Description
Bean stew, or Mbosho, is one of the most popular edible seeds in Kenya. To prepare bean stew, you need to boil the beans until they are soft, then fry them with onions and tomatoes. Bean stew is usually enjoyed with cooked rice. If you're after plant-based protein, bean stew is the way to go.
Ingredients
- 500g Beans
- 2 large Tomatoes
- Chopped Coriander
- 1 Green Pepper
- ½ teaspoon Garlic
- Salt to taste
- 1 medium size Onion
- 2 tablespoons vegetable oil
Preparation Procedure
- Soak the beans overnight to make them soft and to reduce the time of boiling
- Put them in a pot and boil them at high temperature until they soften
- When soft, drain them and they are ready to be fried
- Chop tomatoes, green pepper, coriander, and onions separately
- In medium heat place a frying pan and pour 2 tablespoons of cooking oil
- Add chopped onions and stir until they are golden brown
- Add mashed garlic and stir
- Add tomatoes and green pepper and mix
- Let them cook until the tomatoes are mashed (if you need more spices add them)
- Add a pinch of salt
- Pour the drained beans into the mixture and mix well
- Add a little water and cover them to simmer for 5 minutes
- The beans are ready to be served as a stew with rice and chapati.
